
About the Owner
Dillon Livers brings over a decade of hands-on experience in distillery management and quality operations at two of Kentucky’s most respected bourbon producers. A graduate of Eastern Kentucky University with degrees in Forensic Science and Chemistry, Dillon blends scientific expertise with a deep passion for the craft. Throughout his career, he has led quality and efficiency initiatives, developed innovative production strategies, and consistently pushed the boundaries of what whiskey and bourbon can be. His mission is to elevate day-to-day distillery operations while inspiring a spirit of experimentation rooted in tradition.
Distillery Experience
A Decade of Craft, Innovation, and Leadership in Whiskey Production
Dillon’s journey in the world of spirits began in December 2014 as a Lab Technician at Buffalo Trace Distillery, where he specialized in bottling quality and worked closely with the Processing team to approve spirits for release. Under the mentorship of the Master Blender of Sazerac Company, Dillon’s expertise quickly expanded to include blending and approving rare and exclusive whiskies.

During this time, Dillon immersed himself in organoleptic studies, sharpening his sensory evaluation skills across whiskey, bourbon, and experimental spirits. His dedication led to his role on the exclusive Buffalo Trace Tasting Panel, where he developed a standardization program for sensory evaluations that elevated quality control across multiple product lines. His passion and talent caught the attention of the Master Distiller of Buffalo Trace Distillery.

In April 2016, Dillon advanced to Distillery Supervisor at Buffalo Trace, a position he held until December 2021. He oversaw every aspect of commercial bourbon and rye whiskey production, ensuring adherence to both quality standards and government regulations. His leadership encompassed boiler operations, raw material handling, whiskey mashing, fermentation, distillation, and quality control, as well as managing a large Union workforce.

Dillon also played a pivotal role in Buffalo Trace’s experimental program and Warehouse X project, designing mash bills, scheduling experiments, and collecting data to inform future innovations. His insights and findings were regularly presented to the Sazerac experimental committee, which included the company’s executives, directors, and its renowned Master Distillers and Blenders.

In January 2022, Dillon joined Four Roses Distillery where his responsibilities expanded into grain procurement, distillate shipment forecasting, DDG scheduling, and monthly mashing schedules. As a member of the sensory team, he offered critical evaluations for white whiskey production and was a secondary approver of final products outside of the Master Distiller's team at Four Roses. Additionally, Dillon oversaw process improvements, new product development, and distillery optimization initiatives in day-to-day whiskey production at Four Roses.
